Quick answer: buy 1 lb of whole turkey per guest — that's the USDA's rule. If you want ample leftovers (the whole point of Thanksgiving for many families), plan 1½ lbs per guest. A turkey is mostly bone and water, so the raw number looks bigger than the meat you actually serve.
A big share of a whole bird isn't meat: the carcass, the giblet bag, and moisture lost to the roasting pan. An 18-lb turkey yields roughly 6–7 lb of carved meat — so a "1 lb per person" rule already builds in the loss, and the extra half-pound is what buys you Friday's sandwiches. The math for any crowd: guests × 1 lb = no-leftovers size; guests × 1.5 lb = leftovers size.
| Guests | No leftovers (1 lb each) | With leftovers (1½ lb each) |
|---|---|---|
| 6 | 8-lb bird* | 10-lb bird |
| 8 | 8–10-lb bird | 12-lb bird |
| 10 | 10-lb bird | 15-lb bird |
| 12 | 12-lb bird | 18-lb bird |
| 15 | 15-lb bird | 22–24-lb bird |
| 20 | 20-lb bird | two birds (e.g., 15 + 15) |
| 25 | 25-lb bird | two birds (e.g., 18 + 20) |
| 30 | two birds (15 + 15) | two birds (e.g., 22 + 22) |
*Whole turkeys rarely run under 8 lb at the store, so small crowds just buy the smallest bird and enjoy the bonus leftovers. Once you're past about 20 lb, two smaller birds beat one monster: they roast more evenly, fit the oven better, and give you a backup if one cooks fast.
The USDA rule: 24 hours of fridge thawing per 4–5 lbs of turkey.
| Bird size | Fridge thaw time |
|---|---|
| 10 lb | 2–2½ days |
| 12 lb | 2½–3 days |
| 15 lb | 3–4 days |
| 20 lb | 4–5 days |
| 25 lb | 5–6 days |
In a hurry: a wrapped bird thaws in cold water at about 30 minutes per pound — change the water every 30 minutes. Fresh birds only need buying 1–2 days before cooking.
14 guests and you want the famous leftovers: 14 × 1.5 = 21 lb — buy a 20–22-lb bird (a tom). Start fridge-thawing 5 days before the big day, and check the thickest part of the thigh and breast with a thermometer: 165°F minimum everywhere, even if it has a pop-up indicator. Then plan the rest of the meal — sides, rolls, pies, drinks, ice — in the planner:
Plan the whole Thanksgiving menu — free plannerIs 1 lb per person really enough? Yes — that's the USDA figure, and it already accounts for bones and cooking loss. It assumes normal portions and a table of sides. It does not leave you with leftovers, which is why 1½ lb is the crowd favorite.
Fresh or frozen? Frozen is cheaper and can be bought weeks ahead; fresh buys you nothing but convenience and must be bought 1–2 days out. Check the label for added solution, which changes the salt in your brine.
How long do leftovers keep? The USDA says refrigerate everything within 2 hours of serving and use turkey, stuffing, and gravy within 3–4 days.
